When I was young, my dad would tell me to be “neither for nor against anything.” As a grown woman, I disagree with this statement except when it comes to one thing: pumpkin spice lattes. It seems like these days you either have to be a PSL fanatic or a PSL hater. I am neither….
Breakfast
Turmeric Ginger Energy Balls
It’s officially fall, and here on Long Island we’ve already had some days that have felt more like winter! Now that the temperatures are starting to drop, I’m reminded of the two-part process it takes to keep warm in my little drafty house. Step one includes my cozy fleece robe and ugly slippers that I…
Iced Cacao Matcha Latte
I am obsessed with all things cacao and this recipe is no exception! I’ve been drinking matcha for about a year and a half now (since I quit coffee) and I recently started adding cacao which has been a total game-changer. I won’t lie, I still dabble in coffee from time to time, but I…
Strawberry Basil Margarita Smoothie
It’s June, and you know what June means? Fresh strawberries and fresh basil! This recipe was a total no-brainer because it combines two of my favorite spring specialties, for a refreshing seasonal beverage. This Strawberry Basil Margarita Smoothie is great two ways: made virgin-style for a delicious light breakfast, or with a splash of tequila…
DIY Superfood Breakfast Cereal
DIY Superfood Breakfast Cereal is one of those recipes that once you try it, it will be in your repertoire forever. I am so excited to share this one with you guys because I’ll admit I was definitely in a breakfast rut lately. The same old smoothies over and over again, not too exciting right?…
Easy Whole Wheat Blueberry Scones
Okay, let’s get one thing straight. I am no baker. I’m not claiming these to be the most authentic British scones or the most elaborate. But they are freaking delicious and SO easy to make. No kneading, no rolling, no special equipment needed. Just simple, easy vegan blueberry scones, made with whole wheat flour, coconut…
Green Pea Smoothie (aka Peas on Earth Smoothie)
This plant-based smoothie is easy, quick, and yep, packed with green peas! So nutritious and filling, makes the perfect light breakfast or mid-morning snack!
5-Ingredient Sweet Potato Breakfast Bowl
In the middle of winter, I have zero interest in smoothies. Don’t get me wrong, I love smoothies (and am definitely jealous of the California girls on Insta who drink them all year long). But when it’s this cold, a chilly beverage in the morning does not appeal to me. Mornings tend to be rushed,…
Cinnamon Sweet Potato Muffin Bites
These Cinnamon Sweet Potato Muffins (or muffin bites if you have a mini cupcake pan) are deliciously moist, naturally sweet, and totally pop-in-your-mouth-able. Totally easy for the non-bakers out there and made with super simple ingredients. I’ve never been much of a baker (savory > sweet any day) but many moons ago, I worked at…
10-Minute Iron-Rich Vegan Scramble
Scrambles are my jam because they are easy and quick. Since they usually only require one pan, they are perfect for lazy mornings or late nights after work when I need some food in my belly stat. What makes this recipe extra special is that it is iron-rich (perfect for that time of the month, ladies!). It also only takes about 10 minutes, which for me, is about all the time I want to spend cooking when I’m feeling that first-day-flow-action.
Vegan Strawberries & Cream Latte
Hellooo coffee lovers! I love coffee too, but you’ll almost never see me at the coffee shop, and here’s why. As a vegan, I struggle to enjoy drinking coffee out because most places only have soy milk or water-y artificially flavored nut milks as the only non-dairy options. Sure, it’s fun to go out with the girls for a coffee, but the milk options never taste good or blend in coffee, and I have to deal with those weird side-eye looks when the soy milk starts to separate and curdle…(vegans, you know what looks I’m talking about.)
Savory Winter Breakfast Bowl
It’s snowing today on Long Island, so I am writing this at home with a coffee in hand and pajamas still on. My house is drafty so on a cold morning, sometimes the only thing to get me out of bed is the thought of a giant, warm, delicious, savory bowl of vegetables. I love a potato bowl for any meal, but adding fresh brussels sprouts and chickpeas makes this one of my favorite and most nourishing breakfasts to enjoy during the winter.
This breakfast is so filling, so easy, takes only 20-30 minutes, and best of all, uses just one pan which makes for a lazier day in pajamas with fewer dishes to wash. Win-win right?
Cinnamon Coffee Smoothie
After a morning workout, this smoothie totally hits the spot.
CINNAMON COFFEE SMOOTHIE INGREDIENTS:
