When I was young, my dad would tell me to be “neither for nor against anything.” As a grown woman, I disagree with this statement except when it comes to one thing: pumpkin spice lattes. It seems like these days you either have to be a PSL fanatic or a PSL hater. I am neither. Pumpkin spice lattes exist, and so, life goes on! This recipe is a simple play on vegan overnight oats, and it just so happens to include pumpkin and coffee. I guess I could have called it Pumpkin & Coffee Overnight Oats, but Pumpkin Spice Latte Overnight Oats just has a better ring to it, right?
This recipe is simple, packed with nutrition, and of course, delicious. It takes just five minutes to throw together at night, and you’ve got yourself a hearty breakfast the next morning. If you’re feeling meal-preppy, go ahead and make a few jars at once! They will be okay to eat for about a week, but I find that the texture starts to get a little too mushy after 3-4 days, so best if eaten within a few days.
The “latte” part of this recipe comes from the liquid base of coffee (already brewed, not coffee grounds!!) and almondmilk. If you make your own almondmilk, great! If you have a life, buy New Barn almondmilk. Okay, KIDDING, it’s obviously awesome if you make your own, but if you’re like me and just don’t have the time and/or equipment to do so, New Barn’s got your back. Made with organic almonds, water, a touch of salt, and organic acacia gum, it’s the closest thing to homemade on the shelves. I use their Unsweetened almondmilk in these vegan overnight oats but you could also use their Unsweetened Vanilla, or Original (sweetened with maple syrup). Just adjust the added maple syrup in the recipe if you choose to go with a sweetened almondmilk.
Now for the “pumpkin spice” portion of the recipe! Feel free to roast and puree your own pumpkin if you have the time, or simply buy a can of pumpkin puree. Just be careful that it has one ingredient (pumpkin!) and doesn’t have sugar and flavors already added. Cinnamon, nutmeg, and ginger add the “spice” that gives these vegan overnight oats that classic PSL flavor! Don’t over-do the spices though; you can always add more in the morning.
I love these vegan Pumpkin Spice Latte Overnight Oats because they are an easy, grab-and-go breakfast that keeps me full all morning. Oats are SO filling and the addition of pumpkin provides extra fiber, potassium, Vitamin A, and some Vitamin C. Did you know that both oats and pumpkin provide significant antioxidants too? Plus, the small amount of coffee gives me that little boost of caffeine to get me movin’ and groovin’. This breakfast really covers all the bases!

Ingredients
- 1/4 cup New Barn Organic Unsweetened Almondmilk, (unsweetened or vanilla works!)
- 1/4 cup coffee, already brewed
- 1/4 cup pumpkin puree
- 1 tablespoon maple syrup
- 1/4 teaspoon vanilla extract
- 1/2 cup rolled oats
- 1/4 teaspoon cinnamon, ground
- 1/8 teaspoon nutmeg, ground
- 1/8 teaspoon ginger, ground
- 1 pinch salt
Instructions
- Add almondmilk, coffee, pumpkin puree, maple syrup, and vanilla extract to any glass jar or container. Stir well.
- Add oats, cinnamon, nutmeg, ginger, and salt. Stir again.
- Put the lid on and refrigerate for at least four hours or overnight.
- Add any additional toppings in the morning and enjoy!
