DIY Superfood Breakfast Cereal is one of those recipes that once you try it, it will be in your repertoire forever. I am so excited to share this one with you guys because I’ll admit I was definitely in a breakfast rut lately. The same old smoothies over and over again, not too exciting right? Enter this superfood breakfast featuring my favorite oat bar: Bobo’s! I’ve been eating Bobo’s for a while now, but until recently, I would just grab a bar on my way out the door and shamefully eat it in the car on the way to work. In an effort to get my day started on a better note, I’ve been getting up a few minutes earlier. Turning this simple yet delicious oat bar into a huge, filling, and totally satisfying breakfast has been a total game-changer. With the addition of an unsweetened nut milk and a few of my favorite superfoods, this is now my go-to breakfast!
If you aren’t familiar with Bobo’s, let me sum the company up for you. They are one of the rare companies that actually LISTENS to its consumers and is willing to make changes. This family-owned company still uses the small-batch baking methods that they started with in 2003, which I think is so cool! What’s even cooler is that despite their old-fashioned methods, they are constantly trying to improve the product itself. Until recently, they were using a blend of canola, olive, and palm oils in the bars. To improve the bars’ nutritional value and texture, they transitioned into an organic coconut oil instead. To me, that is what separates Bobo’s from other companies: a willingness to change and listen to consumer demand, even as a small company.
As someone who cares about the ingredients I consume, this change to organic coconut oil was huge! When a brand’s food philosophy aligns with my food philosophy, sparks fly. I know that I am putting good quality ingredients into my body when I eat a Bobo’s bar. Organic oats, organic coconut oil, and sweetened with brown rice syrup. For me, that makes Bobo’s for breakfast a total no-brainer! There are so many different flavors to choose from, but for this superfood breakfast cereal, I chose the Maple Pecan bar. I love this recipe because it only takes a few minutes to throw together in the morning. I mean, it is cereal after all! The Bobo’s bar acts as the base and it subtly sweetens the nut milk as it sits. The superfood breakfast toppings add a little extra crunch, and of course more nutrients! Feel free to play around with different toppings like hemp seeds, blueberries, or whatever you have handy! I personally love this combination of cacao nibs (chocolate-y and crunchy), goji berries (tart, sweet, and chewy), and shredded coconut (nutty with added texture). Top it all off with an unsweetened nut milk and DIY Superfood Breakfeast Cereal is served.
Side note: I have tested this out as an overnight recipe too and it is HEAVENLY, especially if you like your morning oats thick!

Ingredients
- 1 Bobo's Oat Bar, (any flavor!)
- 1 C unsweetened plant milk
- 1-2 T shredded coconut
- 1-2 T cacao nibs
- 1-2 T goji berries
Instructions
- Use your hands to crumble the Bobo's Oat Bar into a bowl.
- Top with plant milk and remaining toppings.
- Serve immediately and enjoy!
- Optional: Let sit overnight in the fridge for a pre-made, super thick option!
